Yams are more nutritious, containing 440 percent of the daily recommended intake of vitamin A and 30 percent of the RDA of vitamin C. The baked yam is stuffed with protein-rich simmered black beans spiced with cumin and chili powder and a bit of garlic. The whole "enchilada" is topped with Daiya cheddar cheese, jalapeno-lime guacamole (add lime zest for extra pow-wow), and chili-lime toasted pepitas.
